Kid. It's What's For Dinner.

Ever have those moments when your kids are driving you up the wall, and you don't know what to do with them? Well, this little recipe, found in my step- grandmother's Portuguese cookbook, may be the answer to your problems. Roasted Kid! It's brilliant! I'm pretty sure they're referring to young goats here, but hey, it might be applicable to actual children too.

In case the recipe is not legible, I've re-typed it below for you adventurous foodies:

ROASTED KID
2 kg kid; salt; paprika; garlic; parsley; bay leaves; freshly ground pepper; onions; white wine

Allow the kid to marinate in the white wine, salt, pepper, crushed garlic, bay leaves, paprika and chopped parsley overnight. The meat is not cooked in the marinade. place the meat on a baking tray and rub with olive oil and lard, and spoon some of the marinade over the meat. Continue to baste the kid with the marinade, if necessary to prevent the meat from drying. When the meat is cooked, place on a large serving platter and serve with potatoes cooked with marjoram.

Mmmmmmm...... Tasty!

On second though, as scrawny as Eamon and Vika are, I'm sure their meat would be stringy and tough. *sigh* Not a good meal at all. Oh well, back to the drawing board....

I think Vika would require red wine.

Maybe we really need to encourage the boy to eat more to fatten him up and get some good marbling.

    Should kid meat be aged?
